More veggies, please

Lakeland in need of more vegetarian options

This article is not meant to offend anyone who prepares meals for the campus or anyone who chooses to eat meat. I just think that there should be a few more options for people who choose not to eat meat.

Since June of this past summer, I have been a vegetarian. I don't have a very specific reason for my choice other than that I just did not want to eat meat anymore.

Before making my decision, I looked over some reliable Web sites and talked with my best friend, who has been a vegetarian for about seven years. Once I knew some basics and the good and bad sides of the choice I was going to make, I made my decision. I knew what I was giving up and what I would have to do to keep myself healthy.

When I left home on Aug. 12, I didn't think that coming back to Lakeland would cause a problem in my diet.

I was wrong. The salad bar was great, but many of the choices in the main line include meat and I was usually out of luck.

I figured once classes began, there would be more choices for a vegetarian like me.

For the most part, there was always a pretty good selection; I could always find something that would work for me such as vegetarian lasagna or veggie wraps. Then I would head to the salad bar and make myself the most wonderful looking spinach salad.

Yes, that's what I said, spinach salad. Spinach is high in iron which makes it perfect for a diet sans meat. Before the E. coli outbreak, everything was peachy. If there wasn't a big choice for me in the main line, I had a huge salad which always made things right.

The E. coli outbreak breaks my heart. Really, it does. After all of that began, I lost my beloved spinach and mixed greens.

I should probably add that I'm not a big fan of ice burg lettuce, so my salads have not been the greatest. Recently though, the mixed greens minus the spinach have returned! I am grateful.

One evening a couple weeks ago, I went to the Muskie Mart with my heart set on a veggie burger. Sadly, I was told that they were out of them. As much as I don't want to admit it, I was a little furious because there's not a big choice for vegetarians at the Muskie Mart either. They do offer a wonderful selection of fruit that makes me happy.

The next day I went in to the Muskie Mart for lunch and asked if they had veggie burgers.

The crazy part was that they had them that day but not the night before.

Since then, I have gotten over the night of no veggie burger, but I would like to see a larger selection offered for vegetarians. I know vegetarians are few and far between, but we like variety too.

Once the spinach returns, I will be slightly happier but Lakeland could add a few more meatless options to it's menu, or at least offer the vegetarian varieties a little more often.

Until then, I will continue to enjoy the choices I do have and hope to see a little more popping up in the future.
